Dark Chocolate Oatmeal Bake

It's the recipe so many of you have been waiting for!! This has become my favorite dessert/breakfast (they're the same, right?) to make for the past couple months. Not only is it decadent and freaking delicious, but it's loaded with fiber, protein, healthy fats, and other amazing nutrients like omega-3's and potassium that keep me feeling satisfied and fueled for hours. This is a recipe you can modify to match your own preferences, and it's super quick and easy to make.


  • 3/4 cup quick oats

  • 1-2 scoops protein powder (I use Vital Proteins collagen peptides)

  • 1 tbsp chia or flax seed

  • 1/2 tsp baking powder

  • 1/2 cup almond milk (whichever milk you prefer)

  • 1 ripe, mashed banana

  • Dash of cinnamon

  • Dark chocolate chunks - optional, but actually kinda sorta necessary.


  • In blender or food processor, blend 1/2 cup of the oats with chia seeds to make an oat flour

  • In a mixing bowl, combine the oat/chia seed flour, the rest of the oats, protein powder, baking powder, cinnamon, and mix

  • Add milk, mashed banana, and dark chocolate chips (should have somewhat of a cake batter consistency)

  • Place in bread pan or baking dish and put in oven at 395 degrees F for 25 min

  • Add nut butter or any other toppings you want to top once finished baking
